  3. Make sure the strip lies flat against the bag wall, not bunched up, so it doesn’t create a wrinkle that breaks the seal.

It won’t create as tight a vacuum as a machine can on solids, but it avoids the liquid-in-the-machine problem completely and still removes enough air for even, reliable sous vide cooking.
